I have an idea in my mind of what I consider to be the perfect pancake. It’s probably close to everyone else’s. Fluffy and light yet substantial. And I actually like mine a little undercooked in the middle. I have yet to create this perfect pancake, but that’s okay ’cause I’ve got plenty of time to keep trying. For a long while I used a whole wheat pancake mix and added applesauce and milk, and that sufficed but got me no closer to my pancake goal. So this morning I tried the pancake recipe from VWAV.
Here’s an unintentional heart-shaped pancake.
These pancakes turned out more crepe-like for me, and I used the lesser amount of liquid. They didn’t really puff up either. I don’t think it’s a bad recipe, but for me it didn’t exactly work. I’m going to try it again with a bit more flour for a thicker batter. I topped my stack with blueberry syrup and a dollop of vanilla soy yogurt for good measure.
And here’s my plate about 90 seconds later.

I had the same results as you did with this recipe- my pancakes were very flat. But they’re still delicious! Just not super fluffy and tender.

I got the Candle Cafe cookbook from the library (I *think* that is what it is called…) and slightly modified the pancake recipe in there. It is amazing!

But they look wonderful! I was just thinking about making that recipe the other day, too bad it’s not exactly what you were looking for. The ones you made do look very good – I can never get them that light and pretty, mine always kind of fall apart.

Bonnie – I let the batter sit a while before I cooked ’em, and I also let the griddle heat up a good long time so the heat would be even and perfect. I think those are two pancake tips. All that waiting may have been why I ate so quickly when they were finally done.
