Potluck Brunch & Laptop Lunches

Janeen invited many lady friends over for a potluck brunch yesterday.  Yeah, I just had brunch with her last weekend but I guess she needed more lady company.  You can never have too much lady company, or too many mimosas in said company’s presence.  Well, I take that back.  You could certainly have too many mimosas.  We generally run out of champagne before we enter the danger zone.

Janeen suggested ideas of things to bring for those less potluck-obsessed than I, and of course quiche was on the list.  I’ve made good vegan quiche before from some random recipe I have filed away, but I set my sights on this quiche from the PPK blog, with the little bits of broccoli.  I had visions of my tofu quiche being way better than any eggy quiche that might dare to show up.  Of course, nobody else did quiche, but those who tried mine were complimentary.

I was momentarily worried it wouldn’t set up properly, and tempted to throw in a tablespoon of cornstarch just for guarantee, but then I remembered that pretty much all of Isa’s recipes are great and that I could trust her.  After baking it was still soft inside, but it definitely did set the way it should.

I also wanted to make something sweet, and settled on Double Chocolate Muffins from La Dolce Vegan.  I made them minis so we could go back for seconds and not feel bad.  These turned out well, although in this case I’m not sure where the line is between muffin and cupcake.

After not packing any lunches last week, I realized I never posted them from the week before!  So here they be.

What do sick vegans eat?

Okay, I don’t know what sick vegans in general eat, but this is what I ate while I was sick.  After starting meds and taking an intense nap while my fever broke, I felt well enough to get off the couch and take some pictures.

This is the brand of storebought bread I like to buy.  It’s the only one on the whole bread aisle that’s vegan AND doesn’t have high fructose corn syrup.  It’s sweetened with raisin juice!  And it tastes good.

Peanut butter toast is my favorite sick food.  It’s easy to digest and helps keep my tummy nausea-free.

When I was a kid and got sick my mom would give me orange Gatorade and toast or crackers.  I never want to drink water when I’m not feeling well, but I don’t want to get dehydrated.  So I wanted to get some Gatorade, but when I checked the ingredients, high fructose corn syrup was the first or second ingredient on every list!  Powerade too.  Stupid hfcs, it’s everywhere.  Instead I got white grape pomegranate juice and fizzy water and made a cocktail.

A while back, Katie of Chocolate Covered Vegan recommended oat bran to me, since I don’t like oatmeal that much.  And let me just say – it’s fabulous!  I now love oat bran.  It cooks in the microwave in minutes and comes out like a smooth porridge, with all the benefit of oats.  Thank you, Katie!  My first tries at oat bran included pumpkin, and the second morning I got it just right.  I cooked it with pumpkin puree, almond milk, maple syrup and a pinch of salt then added walnuts and cinnamon.

When I started to feel better I got bf to take me to Moe’s for lunch.  I opted for the new multigrain tortilla, but I don’t recommend it.  It has a doughy texture and the Moe’s guy had a hard time wrapping it, which is understandable.  Also, I’m a dummy and didn’t double-check that it’s vegan, and it tasted like it may have honey in it.  The burrito was still good though.  I like to get no rice and add extra veggies.  Not that I don’t like their rice, but I feel like a huge tortilla and chips is carbtastic enough for one meal.

I also made what I’m dubbing the vegan McRib with leftover Barbecued Seitan Ribz and Apricot BBQ Sauce.

Thank you to everyone who commented on my last post with well wishes!  I’m feeling all better now, although I still have a number of huge pink pills to take to finish out the antibiotics.  I have some restaurant foods to share next time, but now I’m off to prepare for a wiffleball game, weather willing, a potluck brunch tomorrow, and a visit from a friend who’s in town for the weekend.

Whirlwind Weekend

Greetings.  I had a great food and friends weekend, and I wanted to write this post Monday morning, but I woke up with a terrible sore throat.  Soon it became the kind of sickness that completely knocks you out, and by nighttime I had a fever.  Yesterday I went to the doctor and found out I have strep throat so I filled her prescriptions, took the pills, and again was knocked out.  Last night I was far too lethargic and nauseous to type anything, so here I am Wednesday morning, pre-med ingestion, to write out this post that’s been hanging over my head then resign myself to another day of boredom and nausea.

When I was in high school, if I spent a Friday night alone I would get really depressed.  Now I find I’m perfectly content to spend an entire Friday night at home cooking, and that is what I did on Friday.  I knew Saturday I was going to have no free time, so I cooked and prepped everything Friday night.  I also made pesto pizza for dinner using farmers market basil and tomatoes and VWAV pizza crust from the freezer.

Upon taking the crust out of the freezer, I was reminded how awesome I am, because I had included this note to myself on how to bake it, so I wouldn’t have to look it up again.

The pesto recipe and tofu ricotta were also from VWAV.  I put the red onion on sparingly, but afterwords wished I had put more on, because it was really yummy.

Janeen had invited me to brunch Saturday morning, so I got up and finished up the food to take to her place.  I made what I’m calling Monkey Rolls – banana-chocolate-walnut cinnamon rolls.  I made the Pumpkin Cinnamon Rolls from the Don’t Eat Off the Sidewalk zine, subbing mashed banana for the pumpkin and adding chocolate chips and chopped toasted walnuts to the filling.  I also subbed canola oil for the margarine in both the rolls and the filling, as Janeen is allergic to soy.  I was most nervous about that substitution, but they turned out great.

I had intentions of icing them with both vanilla and chocolate and almost skipped the chocolate part for lack of time, but I’m glad I went with both because I think the chocolate icing was the part that really took them over the top.

I also made what I envisioned to be baked black bean & sweet potato taquitos.  Friday night I made the fillings, which were Refried Black Beans from Yellow Rose Recipes, and a sweet potato mash with lime juice, cilantro and minced chipotles.  Saturday morning I made my first homemade wheat tortillas from this recipe.  I made 12 tortillas instead of the 8 the recipe calls for, to make them smaller.

They turned out really well for a first attempt, but they weren’t as pliable as I had hoped.  I wrapped each one around some of the black beans and sweet potato, secured them with a toothpick, and baked for about 15 minutes.  Right around the time I was trying to finish photgraphing and pack up for Janeen’s house, a crazy storm started rolling in and took all my light.  So I skeedaddled to Janeen’s just in time to beat the rain and took the rest of the photos by flash, and candlelight because Janeen is romantic like that.

So the taquitos didn’t wrap up as I had hoped, but they tasted really good.  I served them with a quick guacamole and homemade enchilada sauce.  I like the enchilada sauce you can buy at the store (Old El Paso?) but felt like trying homemade.  I figured it couldn’t be too difficult.  I was skeptical about just how much a roux would do for an enchilada sauce, but it really did the trick.  The sauce had a silky mouthfeel that couldn’t have been acheived by just mixing ingredients together.  The only change I made was to add 2 tsp of sugar.  I like a sweet sauce.

Janeen made some excellent potatoes, cooked with a bruschetta mix and mushrooms.  These were really good.

She also put together a pretty fruit plate.

We had planned a bike ride after brunch, but since it was storming we stayed in and ate like piggies.

Afterwards we went to watch bf’s band play at an afternoon benefit show, then retired to his house for a bbq.  I came home in between to clean up, and by the time I got there this was the spread on the coffee table.  Normally we’ll have out a bag or two of chips, but apparently that day we were partying like there were 20 of us even though there were only really 8.

And for further exhibit of “how we roll”, here is the top shelf of the beer fridge.  Yes, there are two fridges and one is just for beer.

For the bbq I made Apricot BBQ Sauce from VCon.  I was skeptical about how good this could be with no vinegar and such a small amount of tomato, but this is really good.  Make it now while apricots are in season!

I used this sauce to baste FatFree Vegan’s Barbecued Seitan Ribz.  So good.

I also made squash pickles.  You may recall that I first made them a while back, and wasn’t quite happy with the seasoning.  This time I got it right.  Nobody else seems to like these as much as I do, but I do like them.  So if you like squash and pickles, give them a try.

Squash Pickles

2 yellow squash and 1 zucchini, or 4 yellow squash, sliced
1 c vinegar (1/2 c apple cider, 1/2 c white)
1 c sugar
heaping tsp kosher salt
2 c water or enough to cover squash
medium to large shallot, very thinly sliced
1 tsp pickling spice
1/3 tsp red pepper flakes
1 tsp mustard seed
2 tsp celery seed

Put all ingredients in a non-reactive container and stir. Refrigerate overnight, stirring occasionally.

For crisper pickles, salt the squash slices and let sit in a colander for a half hour. Rinse before adding to other ingredients.

Farmer’s Market Green-Wa & My First Meme

I left work a bit early again today to get to the farmer’s market, and boy was it worth it.  The produce is gorgeous this time of year.  Eggplant and squashes abounded, but I’ve been eating a lot of those lately so I went for some different stuff.

Tomatoes, fresh field peas, lamb’s quarter, a huge bunch of basil, and okra.  The field peas are very similar to a black-eyed pea, just green, and since they were fresh all I had to do was simmer them for an hour.  The veggies were so pretty today that they each got a glamour shot.

Lamb’s quarter is an ancient green that apparently grows wild almost everywhere.  The guy at the booth also called it wild spinach, and handed me a leaf to try.  Raw it was pretty bitter, but once cooked it tastes incredibly similar to spinach.

While I was messing with the tomatoes this little inch worm crawled out.  He was trying desperately to get off the tomato and was hard to photograph.  One of the tomatoes had a hole in it, so I wonder if he was in there nibbling.

For dinner I made Green-Wa from Yellow Rose Recipes (another winner), with lots of changes.  Using what I had, I went for a more southern flavor.  I subbed the field peas for green peas, white onion for green, lamb’s quarter for spinach, dill for cilantro, and mustard powder, paprika and white pepper for curry powder.  I added nutritional yeast and a squeeze of lemon juice for oomph.  What I ended up with smelled like spanakopita due to the dill, and tasted delicious.  While I was putting this together I roasted the okra and some of the tomatoes with olive oil spray and grill seasoning.  I don’t know what it is, but even in the heat I keep turning on the oven.  Everything I want is roasted or baked!

I like how it looks like the plate is floating.  Out of character for me, I finished cooking before the sun went down and went out on the balcony for the picture.  I topped the green-wa with mashed avocado, purely because it was ready to be eaten.

Vegan Cottage Cheez

I’ve been wanting to try a tofu cottage cheese for a while, so for dinner tonight I had some things that will go well in my lunchbox tomorrow.  Cottage cheese seems more like a lunch-y or breakfast-y thing to me.

I made the Creamy Cottage Cheez from the Uncheese Cookbook, subbing plain soy yogurt for the mayonnaise to bring the fat content down.  I also made my Savory Carrot Salad with the last few carrots and some squash and zucchini that were in the fridge.  Throw in some gluten-free crackers, half a pear and a salad with Annie’s Woodstock dressing and you’ve got a nice little TV dinner.

Verdict:  Like most vegan stand ins, you’re not going to fool anyone into thinking this is real cottage cheese.  The texture is right on, but the flavor is all soy, which is okay with me.  It filled the hole in my heart left by the cheese with the oddest texture.

Orlando Weekend

For my birthday last month I asked bf to take me to Cirque du Soleil’s La Nouba.  Since the date we picked to go coincided with our anniversary, we decided to book an extra night and go for the whole weekend.  In addition to seeing La Nouba and sleeping a lot, we took the opportunity to try some new restaurants and visit an old favorite.

Friday we left work early to get on the road and visit Garden Cafe for dinner.  I had heard only good things about this vegetarian Chinese restaurant and was excited to try it, bf not so much.  But he made do.  I was actually worried about deciding what to order, as I’m not used to having so many options.  From what our waitress said only a few menu items included egg or honey, the majority was vegan.

I started with the wonton soup.  The wonton filling was a little bland, but the stock was very nice.

BF loves lo mein so he ordered the Combination Lo Mein, which had a couple kinds of veggie meat.

I chose one of the house specialties, Orange Beef.

Overall the food was very good.  If you’re not a fan of fake meats they had veggie and tofu selections as well.  It’s a little pricy compared with standard Chinese fare, but the portions are large enough for leftovers.

We travelled onward to our hotel, Buena Vista Palace.  We were originally thinking of staying at a “moderate” Disney hotel, but this was a much more affordable room that was still really close to all the Disney action.  The decor was modern, the bed was comfy, and the room was cold.  We opted for a “Disney view” room, so Friday night we watched the fireworks over Epcot.  Here’s the view when we arrived, you can see the Epcot sphere at the right on the horizon.

After the fireworks we headed to one of bf’s favorite places on earth, the ESPN Club at the Boardwalk, to watch the A’s/Giants game.  I was feeling snacky so I ordered fries, which came in this contraption.

I think it’s supposed to be like a basketball hoop?  I’m still not sure.  I didn’t know it came with the dipping sauces on the bottom, and didn’t eat any of them.  Ketchup is enough for me.

Saturday morning we ate blueberry muffins I had pulled from my freezer, and I had hotel coffee with instant creamer and stevia, which was actually pretty good.  For lunch we headed to Big River Grille, also in the Boardwalk area.  This brewpub is owned by Gordon Biersch, who also owns A1A Aleworks in St. Augustine.  I had previewed the menu online to be sure I’d find something to eat there.

I ordered their beer sampler, 3 ounces of 6 kinds of beer.  It was quite a bit for lunch, but I like to get samplers at brewpubs to get a feel for everything they do.  This was after I kicked the table and spilled some of it.

I didn’t care much for the light lager or the pilsner.  The seasonal wheat beer was okay, and the special cherry beer in the middle was interesting.  The flavor was good but it had lost carbonation in the brewing process since it was an experimental beer.  My favorites were the darker beers, the pale ale and the red ale.  I’m not sure why there weren’t any truly dark beers, I guess they brew those seasonally.

For lunch I ordered the hummus appetizer minus the feta it comes with.  I was pretty hungry and forgot to take a picture until I was a couple bites in.

The hummus was standard, good but not anything special.  My only wish was that there were more veggies.  I was worried an appetizer portion wouldn’t be enough, but thankfully this was plenty to get me through until dinner.

After lunch we went back to the room and took a TWO AND A HALF HOUR nap.  We didn’t mean to sleep that long.  The room was just so dang comfortable!  It was lucky bf had thought to set an alarm just incase.

Next stop was La Nouba.  We got dressed up all nice, but bf didn’t want to appear in a photograph.

The show was amazing.  I knew it would be good, and it delivered.  Even bf, who wasn’t sure he would like it, said “I liked it a lot more than I thought I would”.  If you ever have a chance to see any of the Cirque du Soleil performances, go.  I hope to see more of them.

We had planned to go to dinner that night at an Ethiopian restaurant, but it took a little longer to get out of the theater than anticipated, and bf was hoping to be back at the ESPN Club by 9 for another baseball game.  So we decided to postpone our dinner plans and just eat at the ESPN Club.  I knew thanks to one of Ruby Red Vegan’s Disney food posts that there was a suitable veggie sandwich on the menu.  I double checked with our waitress, who sent the chef out with a list of ingredients to go over with me, and sure enough the Grilled Veggie Sandwich with Cucumber Salad is vegan!  It was pretty good too, the bread was hearty and the vegetables well seasoned.  The only thing that got me was that the grilled veggies had been chilled so the whole meal was cold.

I wasn’t in a beer mood, so I got this frou frou drink which I think was called the Power Play.  It had blue caracao, melon liqeuer, lemon and pineapple juice, and I think rum.  I’m a sucker for anything with melon liqeuer.

We slept like babies again Saturday night.  The next morning we packed up, walked around Downtown Disney for a bit, then headed to Nile Ethiopian.  I’d only had Ethiopian food a few times, and was looking forward to trying it again.  I ordered the vegetarian combination plate.

From left to right there is a salad with vinegary dressing, spicy lentils, split peas, collard, and cabbage on the bottom.  I don’t know the proper names of the dishes but I know they were all tasty.  BF liked the flavors but wasn’t a big fan of the sour injeera bread you use to scoop.

Overall I had a great time.  We slept a lot, ate a lot, saw an awesome show, and now it’s back to the daily grind.  I hope everyone else had a great weekend.

Laptop Lunches

Here’s my weekly lunch roundup.  I didn’t take one Monday – can’t remember why now, I think the box wasn’t clean so I plopped what I could find in some tupperware.

Blueberry Muffins & a Seafood Feast

I had been thinking of making the Very Berry Muffins from Yellow Rose Recipes ever since I got the book, and with a huge bowl of blueberries still in the fridge, last night seemed like a good time for baking.

Unfortunately, I didn’t like them all that much.  I was hoping for light, bakery-style muffins, but I couldn’t help subbing half whole wheat pastry flour, and I also used an unrefined sugar I’m not too fond of and was trying to use up, which I think turned them brown and a little gummy in the middle.

They’re certainly edible and taste fine, it just wasn’t the muffin I was looking for.  I’ve had good results with other recipes from YRR, so don’t let my muffin results deter you from checking it out…maybe just find a different muffin recipe…

Ever since I saw this post on Vegangelical a couple months back, I’ve been wanting a seafood meal.  Mock seafood, of course.  I started with the groceries.  Celery and corn on the left, broccoli, scallions and dill on the right.  And again, way more fruit than I should eat in the next three days.  There’s so much good fruit this time of year!

I started with the baked hush puppies from above post.  I didn’t want to buy soy cheese, so I added 2 Tbs nutritional yeast instead.

When I first visualized this meal I wanted to make a crab cake, but last week I came across My Vegan Cookbook and his Faux Fish recipe, and I knew I had to try it.  The store didn’t have Old Bay seasoning, so I found this Old Bay Seasoning Mix recipe which is cool because for some reason I thought you weren’t supposed to eat bay leaves.  Guess that’ll learn me.  Guess that’s why it’s called Old Bay.  Dur.

I was really trying to keep the fat and calorie counts down for this meal, so instead of brushing margarine on the fillets I sprayed them with olive oil and patted down the bread crumbs, which worked fine.  I left out the egg substitute because I felt like the tofu and breadcrumbs and everything else would stick it together just fine.  I also added 1/2 tsp of the dulse seasoning I bought for a fishy sea flavor.

I served my feast with boiled mixed veggies, dill and lemon wedges.  I can’t decide which picture I like better, so you get both the horizontal and vertical framing.

The hush puppies tasted just like I remember, and didn’t lose anything with being baked instead of fried.  I really liked the onion, corn and jalapeno bits in them.  And the fish was good!  I had high hopes for this recipe, and it came through.  You’re not going to pass it as real fish any time soon, but the mix of ingredients and flavors is really interesting and the outside is crispy while the inside stays moist.  The fillets held together well.  I have a hard time getting breading to stick to things, and the method of patting it down on each side just before it bakes worked really well.

You-Pick Blueberry Crisp, Faux Pho & Laptop Lunches

My friend Jackie asked last week if I wanted to go blueberry picking on Saturday, and of course my answer was yes.  We wanted to pick blueberries a month or two ago but it was too early in the season.  So Saturday around 12:30 we set out to meet her friend Jenny at a local blueberry farm.  Why we went during the hottest part of the day I’m not sure, it just seemed like the time to go.

The blueberry farm turned out to be not so much a farm setup, but a house with a little sign in the front that said “for berries go around to back porch and ring the bell”.  With trepidation we walked toward these people’s backyard, and the lady was on the porch finishing up with another customer.  She then turned her attention to us and said “You guys ready to pick some blueberries?”.  I kind of felt like a kindergartner being psyched up to go on a field trip, but I appreciated her pep.  She gave us some insect repellent and warned about snakes.  Eep!  We set off toward the farthest field where we had been advised there were plentiful ripe berries, and after about a half hour in the hot, hot sun we came back sweaty, tired, non snake-attacked, and each with 1 1/2 – 2 pounds blueberries.  My haul only cost three dollars!

I was glad when Jenny suggested lunch at Satchel’s, a trendy little pizza place that I like but never go to because bf doesn’t care for it.  They have a killer salad of lettuce, tomato, onion, cucumber, apples and nuts with their secret dressing.  I also ordered an “indy” pizza with mushrooms and spinach.  Their sauce is just a bit spicy.  According to the menu the small salad feeds 2-4 (as a side I assume), but I was famished – I ate my whole salad and half of the 10-inch-or-so pizza, only stopping because I wanted to save the rest of the pizza for dinner.

Soon as I got home I jumped in the shower, a cool shower since I had gotten a little too much sun while berry picking.  When I came out, Jake the monster was being super adorable, so I had to stop and take some pictures.  First he had decided to use my backpack as a bed.  Cats really do love to lay on things.

Yes, those are a couple new melamine plates from Target under the fat boy.  I needed some other supplies from there (gigantic Method laundry detergent, anyone?) and the plates were only like two dollars!  Hi, my name is Erin and I’m addicted to buying cute, cheap plates.

Back to the food.  I didn’t have any specific plans for my blueberries, but we were having a few people over to grill that night so I decided a crisp was in order.  For tried and true Southern style recipes I turn to the Betty Crocker Cookbook, and it really never fails me.  I went with blueberries and peaches for the fruit layer.

I patted the crust on and packed it up to bake later at bf’s house.

At this point I was a bit wary of the recipe because I thought that most pie/crisp/crumble recipes added stuff to the fruit, like sugar or flour, and this recipe called for the fruit to be naked.  But like I said, I trust Betty Crocker.

BF and co. were grilling mostly meats that night, so I took along the rest of my pizza from lunch.  Tom did bring over some zucchini and squash though, so I sliced it fairly thick and dressed it simply with olive oil, sliced garlic, thyme, salt and pepper.

The squash was AMAZING.  I assume it was the combo of prep and cooking it in foil directly over the coals that had died down a bit, and I also assume we’ll never achieve this squash nirvana again.  They were soft but not falling apart, and tasted almost buttery.  I was sad there weren’t leftovers.

Meanwhile I baked the crisp, then forgot to take a picture until I had dished out many servings.

Verdict:  Everyone loved this.  I liked that all the sugary sweetness resided in the crust, and the fruits were left to speak for themselves.  The blueberries made this amazing syrup.  I even reduced the original amount of sugar called for, so to me it was perfectly sweet.  I ate mine with a dollop of vanilla soy yogurt.  Before…

Fruit Crisp
adapted from the Betty Crocker Cookbook

4 cups of sliced or chopped fruit (apples, blueberries, peaches, etc)
1/2 cup sugar
1/2 cup all purpose flour
1/2 cup old fashioned oats
1/3 cup margarine, softened
heaping tsp cinnamon
heaping tsp nutmeg

Heat oven to 375.  Grease an 8×8″ baking dish.

Spread fruit in dish. In medium bowl, stir remaining ingredients until well mixed; sprinkle over fruit and pat down gently.

Bake about 30 minutes or until topping is golden brown and fruit is tender. Serve warm with ice cream or soy yogurt. 

Sunday night bf was in the mood for “big soup”.  There is a Vietnamese place called Taste of Saigon II that we go to every once in a while, and pretty much only order the huge bowls of pho.  Two or three meats for bf, vegetarian with oyster mushrooms and tofu for me, and everybody’s happy.  But we’re both trying to save money right now, and I got to thinking that it shouldn’t be too hard to at least make an unauthentic dumbed-down version of pho.  After some help from the internets and a trip to the store this is what we came up with.

I’m not going to write up a recipe because it wasn’t that great, but it definitely hit the spot for what we were craving, made four meals instead of two for about the same price, and saved us from a drive across town.

The general method is to bring the veggie broth, some water, half a sliced onion, 1/2 lb mushrooms, lime juice, a dash of sugar, and salt, soy sauce and five spice powder to a boil, then simmer about 20 minutes.  Meanwhile cook the rice noodles according to the package, and cook any proteins you want to add.

Make a pretty plate of condiments:  bean sprouts, lime wedges, cilantro, sliced jalapeno, scallions, sriracha and hoisin sauce.  Basil probably would’ve been good too.

Put some broth in a huge bowl and add some noodles and optional protein.

Yes, I ate out of a casserole dish  That’s why it’s “big soup”.  Add your garnishes, stir, and eat with chopsticks and a big spoon.

Dining Out @ Las Margaritas

I was planning on going by the farmers market yesterday to pick up some produce for dinner, but with just a little while left in the workday bf e-mailed me saying that he had a crappy day at work and could really use some Las Margs.  Las Margaritas is one of the few restaurants in town that we both enjoy, and we eat there at least once a week, sometimes more.  BF is Mexican and grew up in California eating authentic cuisine, and Las Margs is about as close as you can get here in central Florida.

Shortly after sitting down they greet you with chips and salsa.  Their salsa is good, with fresh cilantro and a little bit of heat.  Last night it was particularly spicy.

We usually order beers, which you can get in a 32-ounce mug.  See my hand for perspective.  I don’t come near to finishing this, but the smaller size is only 10 ounces so even if I can’t finish it’s a better deal.

I wouldn’t dare to call Las Margs vegan friendly.  It’s vegetarian friendly for sure, but so far there are only two things I can order consistently by asking for no cheese.  Don’t get me wrong though, two options are enough to keep me happy.  Last night I ordered what I like to get when I’m trying to be less of a piggy.  Although with those chips and salsa in front of me I inevitably leave overstuffed.

I get a bean burrito and a guacamole salad, both minus the cheese.

Then I transport the salad onto the burrito and get a nice little meal.  I suppose I could probably order it this way, but I try to keep it easier for the staff.

Bonus:  On Wednesday nights there is a live mariachi band!  The place gets a little raucous, but as long as you’re in the mood to have a good time it’s okay.  BF requested a song he likes and they played it for us, with a little trepidation about the lyrics.  I don’t think it’s one of their standards.  They do a rendition of the Happy Birthday song, which you’re bound to hear at least twice.  They’ll even dance with you if you’re lucky.

We’ll probably be back within the week, I’ll try to remember to take my camera again to document my standard Las Margs fare.
